Roast potatoes with rustic


• 1 kg approx. pork shoulder (one piece)
• 1 red onion
• 1 or 2 glasses of dry white wine
• 1 kg potatoes
• 4 tablespoons extra virgin olive oil
• 1 clove of fresh garlic
• salt
• pepper
• Cumin


Meat flavored with herbs: salt, pepper, garlic and cumin.
In the meantime you do fry the onion in a saucepan, add the meat when it is dried.
Add the wine and let evaporate.

The meat should be cooked over low heat and should be wetted with water from time to time.
After half an hour of cooking should be added to the peeled potatoes, washed, divided into quarters and salted to your liking.
Cook the whole lid is closed for another hour, adding water if necessary.
