Giblets are nothing but all the internal organs and viscera of animals: a large family without a doubt that welcomes into its ranks the heart, lung, kidney ("offal dark"), brains, sweetbreads, backs ("offal clear") plus tripe and tongue, along with head, legs, tail, beef or veal.

Giblets are a real treat of Italian cuisine. From the characteristic strong flavor and robust, offal are a valuable source of protein, iron, water-soluble vitamins in the liver and there are also fat-soluble vitamins (vitamin A).
The innards are highly nutritional, but also rich in cholesterol and fat.
